Recipe: Fruit Pizza

INGREDIENTS

CRUST

  • ¾ cup softened unsalted butter

  • ½ cup powdered sugar

  • 1 ½ cups flour

FILLING

  • 1 ⅔ cups (10 oz) vanilla chips

  • ½ cup heavy whipping cream

  • 8 oz softened cream cheese

TOPPING

  • ¼ cup white granulated sugar

  • 1 tbsp cornstarch

  • ½ cup pineapple juice

FRUITS

  • Assorted fruit variety (Kiwi, berries, nectarines, peaches, etc)

DIRECTIONS

Preheat your oven to 300 degrees. Beat the butter and sugar together until light & fluffy. Blend in the flour. Press the mixture to the bottom & sides of a round 12" pan. Bake for 20-25 minutes until lightly browned. Allow the crust to cool completely.

Microwave the vanilla chips and cream on high for 1 to 1 ½ minutes until the chips are fully melted & smooth when stirred. Beat in the cream cheese. Spread evenly on the cooled crust. Cover and chill.

In a small saucepan, combine the sugar & cornstarch. Then, stir in the juice. Cook over medium heat, stirring constantly, until thickened. Allow to cool.

Slice the fruits & arrange them on top of the filling. Pour, or brush, the sugar & juice mixture over the fruit. Allow to cool. Then, slice and serve!

(Use ramekins instead of a round 12" pan, if you wish to make individual servings. Some fruits may bleed onto the filling. Avoid this by gently patting the fruits dry before placing them on the filling. Softer fruits will be easier to cut.)
